Our goal was to create a gluten free buffet that maintains our standard of great tasting, healthy Barbadian food. Head chef Madalyn Foster and her cooking team achieved this and in some cases surpassed all expectations by putting together an assortment of dishes that we are sure you will love.
What is gluten?
Why go gluten free?
1. Wheat is one of the top-eight allergens as listed by the FDA. http://www.fda.gov/food/resourcesforyou/consumers/ucm079311.htm
2. Refined wheat has little nutritional value and is prevalent in most processed food. Manufacturers actually have to enrich it because they have taken out all the nutrients.
3. Many people have gluten sensitivity or celiac disease, and don’t know it. 1 in 100 people have celiac disease - but most don’t know it. No one knows how many people have gluten sensitivity, but estimates are that it may be as high as 50 percent, or even 70 percent, of the population.
4. Wheat and many grains contain a substance called phytic acid that acts as an anti-nutrient by blocking absorption of essential minerals, rendering your healthy meals essentially nutrient deficient.
